Ingredients
  

Chicken & Vegetables
  • 2 lbs chicken thighs bone-in, skin-on
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 3 carrots sliced
Mashed Potatoes
  • 2 lbs potatoes peeled and cubed
  • 0.5 cup butter
  • 0.75 cup milk or cream

Equipment

  • Large skillet
  • Saucepan
  • Potato masher
  • Oven-safe pan

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with garlic, herbs, salt, pepper, and paprika.
  3. Sear chicken in olive oil until golden on both sides.
  4. Add carrots and roast until chicken is cooked through.
  5. Boil potatoes until tender, then mash with butter and milk.
  6. Serve chicken over mashed potatoes with pan juices.
