Ingredients
  

Pasta
  • 12 oz spaghetti or linguine
Sauce Base
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 6 cloves garlic, minced
  • 1 cup parmesan cheese freshly grated
  • 0.5 cup pasta water reserved
Seasoning
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped

Equipment

  • Large skillet
  • Pot
  • Tongs
  • Strainer

Method
 

  1. Cook pasta in salted water until al dente and reserve pasta water.
  2. Melt butter and olive oil in skillet, sauté garlic until fragrant.
  3. Add cooked noodles and toss in garlic butter.
  4. Add pasta water gradually to create sauce.
  5. Mix in parmesan until noodles are glossy and coated.
  6. Season and garnish with parsley before serving.

Notes

Best served immediately for glossy texture.
