Ingredients
  

Calamari
  • 1 lb squid rings cleaned
  • 1 cup all-purpose flour
  • 0.5 cup cornmeal
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 2 eggs
  • 2 tbsp milk
  • 2 cups vegetable oil for frying

Method
 

  1. Clean squid and slice into rings, then pat dry.
  2. Mix flour, cornmeal, salt, pepper, paprika, and garlic powder in a bowl.
  3. Whisk eggs and milk in a separate bowl.
  4. Heat oil to 375°F (190°C) in a deep skillet.
  5. Dip squid rings in egg mixture, then coat in flour mixture.
  6. Fry in batches for 1–2 minutes until golden brown.
  7. Remove with slotted spoon and drain on paper towels.
  8. Serve hot with lemon wedges and dipping sauce.

Notes

Do not overcook squid as it can become rubbery. Fry quickly at high temperature for best texture.
