Ingredients
  

Truffle Base
  • 1.5 cups ladyfingers crushed
  • 8 oz mascarpone cheese room temperature
  • 0.25 cup powdered sugar
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract
  • 2 tbsp brewed espresso cooled
Coating
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup semi-sweet chocolate melted (optional)

Method
 

  1. Crush ladyfingers into fine crumbs using a food processor.
  2. Mix mascarpone and powdered sugar until smooth.
  3. Add espresso powder, brewed espresso, and vanilla; mix well.
  4. Fold in crushed ladyfingers to form a thick dough.
  5. Chill mixture for 20–30 minutes.
  6. Roll into 1-inch balls.
  7. Roll in cocoa powder or dip in melted chocolate.
  8. Chill 15 minutes before serving.

Notes

Store in refrigerator up to 4 days. Can be frozen up to 2 months.
