Ingredients
  

Taco Filling
  • 1 lb ground beef
  • 1 onion diced
  • 2 tbsp taco seasoning
  • 0.5 cup diced tomatoes drained
Egg Base
  • 4 eggs
  • 0.5 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F and grease baking dish.
  2. Cook ground beef and onion in skillet until browned.
  3. Add taco seasoning and diced tomatoes.
  4. Whisk eggs, cream, salt and pepper.
  5. Layer meat and cheese in dish then pour egg mixture over.
  6. Bake 30–35 minutes until set.
