- Heat oil in a large skillet or wok over medium-high heat.
- Scramble eggs in the pan until just cooked then remove and set aside.
- Add garlic and cook until fragrant.
- Add diced chicken and cook for 2 to 3 minutes.
- Stir in mixed vegetables and cook briefly.
- Add cooked rice and stir fry while breaking up clumps.
- Season with soy sauce oyster sauce sesame oil and pepper.
- Return eggs to the pan and mix with green onions.
- Serve hot topped with crispy fried onions.
Notes
Day-old rice works best for fried rice texture.
