Ingredients
  

Fried Rice
  • 3 cups cooked jasmine rice preferably day-old
  • 2 cups cooked chicken breast diced
  • 2 tbsp vegetable oil
  • 2 eggs
  • 1 cup mixed vegetables peas carrots corn
  • 3 cloves garlic minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • 2 green onions sliced
  • 0.5 tsp black pepper
Topping
  • 0.5 cup crispy fried onions

Equipment

  • Large skillet or wok
  • Spatula
  • Mixing bowls
  • Knife and cutting board

Method
 

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Scramble eggs in the pan until just cooked then remove and set aside.
  3. Add garlic and cook until fragrant.
  4. Add diced chicken and cook for 2 to 3 minutes.
  5. Stir in mixed vegetables and cook briefly.
  6. Add cooked rice and stir fry while breaking up clumps.
  7. Season with soy sauce oyster sauce sesame oil and pepper.
  8. Return eggs to the pan and mix with green onions.
  9. Serve hot topped with crispy fried onions.

Notes

Day-old rice works best for fried rice texture.
