Ingredients
  

Cupcakes
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 2 tsp vanilla extract
  • 0.75 cup milk
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • 2-3 tbsp milk or cream

Equipment

  • Mixing bowls
  • Cupcake pan
  • Electric mixer
  • Offset spatula

Method
 

  1. Preheat oven to 350°F (175°C) and line cupcake pans.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar, then add eggs and vanilla.
  4. Alternate adding dry ingredients and milk until smooth.
  5. Bake cupcakes 18–20 minutes and cool completely.
  6. Beat frosting ingredients until fluffy and tint with food coloring.
  7. Arrange cupcakes on a board and frost as one cake.

Notes

Decorate with edible volleyball toppers for a fun finish.
