Ingredients
  

Vegetables
  • 1 tbsp olive oil
  • 1 zucchini sliced
  • 1 cup broccoli florets
  • 1 carrot thinly sliced
  • 1 red bell pepper sliced
  • 1 cup snap peas
  • 2 garlic cloves minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp lemon juice fresh

Equipment

  • Large skillet
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Heat olive oil in skillet over medium-high heat.
  2. Add carrots and broccoli and sauté 3–4 minutes.
  3. Add remaining vegetables and cook 4–5 minutes.
  4. Stir in garlic, salt, and pepper and cook 1 minute.
  5. Remove from heat and drizzle with lemon juice before serving.
