Ingredients
  

  • 2 zucchini medium
  • 0.5 cup all-purpose flour
  • 2 eggs large
  • 1 cup breadcrumbs seasoned or panko
  • 0.5 cup Parmesan cheese grated
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • olive oil spray

Method
 

  1. Preheat oven to 425°F (220°C) and prepare a baking sheet or wire rack.
  2. Cut zucchini into fry-shaped sticks and pat dry.
  3. Set up three bowls: flour, beaten eggs, and breadcrumb mixture.
  4. Dredge zucchini in flour, dip in egg, then coat with breadcrumbs.
  5. Arrange fries in a single layer and spray lightly with olive oil.
  6. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
  7. Serve immediately with dipping sauce.
