Filling
  • 2 cups fresh spinach chopped
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.75 cup feta cheese crumbled
  • 0.5 cup mozzarella cheese shredded

Method
 

  1. Sauté garlic and spinach until wilted.
  2. Mix in feta and mozzarella.
  3. Fill tortillas and fold.
  4. Cook in skillet until golden and crispy on both sides.

Notes

Drain spinach thoroughly to avoid soggy quesadillas.
