Ingredients
  

Crispy Rice
  • 2 cups sushi rice cooked
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt
  • 3 tbsp neutral oil for frying
Spicy Tuna
  • 8 oz sushi-grade tuna finely diced
  • 0.25 cup mayonnaise
  • 1-2 tbsp sriracha to taste
  • 1 tsp soy sauce
  • 0.5 tsp sesame oil
  • 2 tbsp green onions sliced

Equipment

  • Nonstick skillet
  • Mixing bowls
  • Rice cooker or pot
  • Sharp knife

Method
 

  1. Cook sushi rice and season with rice vinegar, sugar, and salt.
  2. Press rice into a lined pan and chill until firm.
  3. Cut rice into pieces and pan-fry until golden and crispy.
  4. Mix tuna with mayonnaise, sriracha, soy sauce, sesame oil, and green onions.
  5. Top crispy rice with spicy tuna and garnish before serving.

Notes

Serve immediately after assembling for maximum crunch.
