- Preheat oven to 425°F (220°C) and line baking sheet with parchment.
- Boil potatoes in salted water until tender, 15–20 minutes.
- Drain and place on baking sheet. Gently smash each potato.

- Roast for 20–25 minutes until golden and crispy.
- Sprinkle Parmesan, roast 2–3 minutes more. Garnish with parsley.
