Ingredients
  

Potatoes
  • 1.5 lbs small potatoes Yukon Gold or baby
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped, optional
  • salt and pepper to taste

Equipment

  • Potato masher
  • Pot

Method
 

  1. Preheat oven to 425°F (220°C) and line baking sheet with parchment.
  2. Boil potatoes in salted water until tender, 15–20 minutes.
  3. Drain and place on baking sheet. Gently smash each potato.
  4. Drizzle olive oil, sprinkle garlic, salt, and pepper.
  5. Roast for 20–25 minutes until golden and crispy.
  6. Sprinkle Parmesan, roast 2–3 minutes more. Garnish with parsley.

Notes

Ensure potatoes have space on the baking sheet for maximum crispiness.
