  • 1 bunch asparagus trimmed
  • 4 carrots peeled and sliced
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp kosher salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Trim asparagus and slice carrots into even pieces.
  3. Toss vegetables with olive oil, garlic, salt, and pepper.
  4. Spread in a single layer on the baking sheet.
  5. Roast for 20–25 minutes, flipping halfway, until golden and crispy.

Notes

For extra flavor, finish with lemon zest, herbs, or grated Parmesan.
