Ingredients
  

Shrimp Batter
  • 1 lb large shrimp peeled and deveined
  • 0.5 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs
  • 1 tbsp water
Firecracker Sauce
  • 0.5 cup sweet chili sauce
  • 2 tbsp hot sauce
  • 1 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tsp chili flakes
  • 1 tbsp honey
  • 1 tsp rice vinegar

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Pat shrimp dry and prepare coating mixture with flour, cornstarch and spices.
  2. Whisk eggs and water in a separate bowl.
  3. Dip shrimp in egg wash then coat in flour mixture.
  4. Heat oil to 350°F in deep skillet.
  5. Fry shrimp in batches for 2–3 minutes until golden and crispy.
  6. Drain on paper towels.
  7. Simmer sauce ingredients in saucepan for 2–3 minutes.
  8. Toss shrimp with sauce and garnish before serving.

Notes

Serve immediately for maximum crispiness. Adjust chili flakes for preferred spice level.
