Ingredients
  

Casserole
  • 1 loaf brioche bread cut into 1-inch cubes
  • 6 eggs large
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar divided
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • pinch salt
  • 2 tbsp unsalted butter melted
Topping
  • 2-3 tbsp turbinado sugar for caramelizing
  • fresh berries or powdered sugar optional, for serving

Equipment

  • Mixing bowls
  • 9x13-inch baking dish
  • Whisk
  • Kitchen torch (optional)

Method
 

  1. Grease a 9x13-inch baking dish and place cubed brioche evenly in the dish.
  2. Whisk together eggs, milk, cream, ½ cup sugar, vanilla, cinnamon, and salt until smooth. Pour over bread.
  3. Cover and refrigerate for at least 2 hours or overnight.
  4. Preheat oven to 350°F (175°C). Drizzle melted butter over soaked bread.
  5. Bake uncovered for 45–50 minutes until center is set and top lightly golden.
  6. Sprinkle remaining sugar over casserole. Caramelize using a kitchen torch or broiler.
  7. Let rest 5–10 minutes. Serve warm with optional berries or powdered sugar.

Notes

For best results, soak overnight. Customize with chocolate, nuts, or spices.
