Ingredients
  

Shrimp Dish
  • 1.5 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 cup sweet chili sauce
  • 1 cup full-fat coconut milk
  • 1 tbsp lime juice fresh
  • 0.25 tsp red pepper flakes adjust to taste
  • salt to taste

Method
 

  1. Season shrimp lightly with salt.
  2. Heat oil in a skillet and quickly sauté shrimp until just pink; remove and set aside.
  3. Sauté garlic in the same pan until fragrant.
  4. Stir in sweet chili sauce and coconut milk; simmer gently until slightly thickened.
  5. Return shrimp to pan, add lime juice and chili flakes, and toss to coat.
  6. Serve hot, garnished with herbs.

Notes

Do not overcook shrimp; they finish quickly in the sauce.
