  • 1 lb boneless skinless chicken breast
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup sun-dried tomatoes chopped
  • 0.5 cup heavy cream
  • 4 oz cream cheese softened
  • 0.25 cup Parmesan cheese grated
  • 1 cup mozzarella cheese shredded
  • 8 slices bread
  • 2 tbsp butter softened

Method
 

  1. Season and cook chicken until fully done, then slice.
  2. Make creamy sun-dried tomato sauce in the same skillet.
  3. Combine chicken with sauce.
  4. Assemble sandwiches with chicken mixture and cheese.
  5. Toast until bread is golden and cheese is melted.
