Ingredients
  

  • 2 packs udon noodles
  • 2 tbsp white miso paste
  • 1 tbsp chili paste
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 cup mushrooms sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.75 cup cream or coconut milk
  • 0.5 cup vegetable broth

  • Large pot
  • Skillet or sauté pan
  • Wooden spoon

Method
 

  1. Cook udon noodles according to package instructions. Reserve some cooking water, drain, and set aside.
  2. Heat sesame oil in a skillet and sauté mushrooms until tender.
  3. Add garlic and ginger and cook until fragrant.
  4. Stir in miso paste and chili paste until smooth.
  5. Pour in cream and broth, stirring to form a creamy sauce.
  6. Add soy sauce and chili oil to taste.
  7. Toss cooked udon noodles into the sauce, loosening with reserved water if needed.
  8. Serve hot with scallions and sesame seeds.

Notes

Adjust spice level to taste and add protein or vegetables as desired.
