Ingredients
  

Potatoes and Sauce
  • 3 lbs russet potatoes peeled and thinly sliced
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 medium onion finely chopped
  • 1.5 cups shredded cheddar cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg optional
  • 1 tsp fresh thyme leaves optional garnish

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a medium saucepan, melt butter over medium heat. Add onion and garlic, sauté 3 minutes until softened.
  3. Stir in heavy cream, milk, salt, pepper, and nutmeg. Heat until just simmering.
  4. Layer potatoes in baking dish, pour cream mixture over, sprinkle cheddar cheese. Repeat layers, finishing with cheese on top.
  5. Cover with foil and bake 45 minutes. Remove foil and bake 20–25 minutes until golden and tender.
  6. Rest 10 minutes before serving. Garnish with fresh thyme if desired.

Notes

Can be prepared ahead and baked just before serving for convenience.
