Ingredients
  

Vegetables
  • 4 cups shredded red cabbage
  • 1 cup shredded carrots
  • 2 green onions thinly sliced
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp fresh parsley or dill optional garnish

Method
 

  1. In a large bowl, combine red cabbage, carrots, and green onions.
  2. Whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper in a small bowl.
  3. Pour dressing over cabbage mixture and toss until evenly coated.
  4. Cover and refrigerate at least 30 minutes to allow flavors to meld.
  5. Garnish with fresh parsley or dill before serving.

Notes

Best served chilled. Can be made a few hours ahead for convenience.
