Corn Base
  • 4 cups corn kernels
  • 1 tbsp butter
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.5 cup cotija cheese crumbled
  • 1 tbsp lime juice fresh
  • 0.5 tsp chili powder
  • 0.25 tsp smoked paprika
  • 0.25 tsp garlic powder
  • 2 tbsp cilantro chopped

Method
 

  1. Melt butter in skillet over medium-high heat.
  2. Add corn and sauté until slightly charred.
  3. Mix mayo, sour cream, lime juice, and spices in bowl.
  4. Combine warm corn with sauce mixture.
  5. Stir in cotija and cilantro.
  6. Spoon into cups, garnish, and serve.
