Ingredients
  

Kofta
  • 2 medium potatoes boiled and mashed
  • 200 g paneer grated
  • 2 tbsp cornflour
  • 2 tbsp cashews chopped
  • 2 tbsp raisins optional
  • to taste salt
  • oil for shallow frying
Curry
  • 2 tbsp oil
  • 1 large onion finely chopped
  • 2 tsp ginger-garlic paste
  • 3 medium tomatoes pureed
  • 0.5 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 0.5 tsp red chili powder
  • 0.5 tsp garam masala
  • 0.5 cup heavy cream
  • 0.5 cup milk
  • to taste salt
  • 2 tbsp cilantro chopped, for garnish

Equipment

  • Mixing bowls
  • Skillet or frying pan

Method
 

  1. Prepare koftas by combining ingredients and shaping into balls.
  2. Shallow fry koftas until golden and drain.
  3. Prepare curry by sautéing onions, adding ginger-garlic paste and tomato puree with spices.
  4. Add milk and cream, adjust seasoning, then gently add koftas and simmer.
  5. Garnish with cilantro and serve hot with naan or rice.

Notes

Simmer koftas gently to prevent breaking. Adjust cream for richness.
