Ingredients
  

Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.75 cup shredded sweetened coconut
  • 0.75 cup unsalted butter melted
Filling
  • 8 oz cream cheese softened
  • 1 can sweetened condensed milk 14 oz
  • 3 egg yolks
  • 0.5 cup key lime juice fresh
  • 1 tbsp key lime zest
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking pan with parchment.
  2. Mix crust ingredients and press evenly into pan. Bake 15–18 minutes.
  3. Beat cream cheese until smooth, then mix in condensed milk.
  4. Add egg yolks, lime juice, zest, and vanilla. Mix until creamy.
  5. Pour filling over crust and bake 20–25 minutes until just set.
  6. Cool completely, then refrigerate at least 4 hours before slicing.

Notes

Bars slice best when fully chilled and topped just before serving.
