Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.75 cup sweetened shredded coconut
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Filling
  • 8 oz cream cheese softened
  • 14 oz sweetened condensed milk
  • 3 eggs large
  • 0.5 cup key lime juice
  • 1 tbsp key lime zest
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and line baking pan with parchment.
  2. Mix crust ingredients and bake until lightly golden.
  3. Beat cream cheese until smooth.
  4. Add condensed milk, eggs, lime juice, zest, and vanilla.
  5. Pour filling over crust and bake until set.
  6. Cool completely, then refrigerate before slicing.
