Ingredients
  

  • 12 oz pasta
  • 8 oz chorizo sliced
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.25 tsp chili flakes optional
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • salt and pepper to taste

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Brown chorizo in a skillet until crisp. Remove and set aside.
  3. Sauté onion in chorizo oil until soft. Add garlic and spices.
  4. Pour in cream and simmer gently until slightly thickened.
  5. Stir in Parmesan until smooth.
  6. Add pasta and chorizo, tossing with pasta water as needed.
  7. Season, garnish, and serve warm.

Notes

Adjust spice level by choosing mild or spicy chorizo.
