- Cook pasta in salted water until al dente. Reserve pasta water and drain.
- Brown chorizo in a skillet until crisp. Remove and set aside.
- Sauté onion in chorizo oil until soft. Add garlic and spices.
- Pour in cream and simmer gently until slightly thickened.
- Stir in Parmesan until smooth.
- Add pasta and chorizo, tossing with pasta water as needed.
- Season, garnish, and serve warm.
