Cinnamon Pop Tarts

Ingredients
  

Dough
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter cold, cubed
  • 0.25 cup granulated sugar
  • 0.5 tsp salt
  • 0.25 cup ice water
Filling
  • 0.5 cup brown sugar packed
  • 2 tsp ground cinnamon
  • 2 tbsp unsalted butter softened
  • 1 tsp vanilla extract
Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 0.5 tsp vanilla extract
Other
  • 1 egg beaten, for brushing

Method
 

  1. In a large bowl, mix flour, sugar, and salt. Cut in cold butter until coarse crumbs form. Gradually add ice water until dough comes together. Divide into 2 disks and refrigerate 30 min.
  2. Mix brown sugar, cinnamon, softened butter, and vanilla for the filling.
  3. Roll out one dough disk to 1/8-inch thickness. Cut into 4x3 inch rectangles.
  4. Place filling on half of the rectangles, brush edges with egg, cover with remaining rectangles, press edges with fork.
  5. Preheat oven to 375°F (190°C). Bake on parchment-lined sheet 20–22 minutes until golden. Cool on wire rack.
  6. Mix powdered sugar, milk, and vanilla for glaze. Drizzle over cooled pop tarts.

Notes

Pop tarts can be made ahead and stored in airtight containers or frozen for later baking.
