  • 1.5 lb chicken breasts boneless, skinless, cubed
  • 3 zucchini sliced
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 1 cup heavy cream
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken with salt, pepper, paprika, and Italian seasoning.
  3. Sauté onion in olive oil until soft. Add garlic and cook briefly.
  4. Add chicken and cook until lightly browned but not fully cooked.
  5. Transfer chicken mixture to baking dish and layer zucchini on top.
  6. Pour cream over the dish and top with mozzarella and Parmesan.
  7. Bake uncovered for 30–35 minutes until bubbly and golden.
  8. Rest for 5 minutes before serving.

Notes

For extra flavor, add fresh herbs or a sprinkle of red pepper flakes.
