Ingredients
  

  • 1 lb chicken breast sliced
  • 1 cup white rice uncooked
  • 2 cups chicken broth
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 0.25 tsp red pepper flakes optional
  • salt and pepper to taste

Method
 

  1. Cook rice in chicken broth according to package directions.
  2. Season chicken with salt and pepper.
  3. Sear chicken in butter and olive oil until golden and cooked through.
  4. Remove chicken and sauté garlic in the same skillet.
  5. Add lemon juice, zest, and red pepper flakes.
  6. Return chicken to skillet and coat with sauce.
  7. Serve chicken over rice and garnish with parsley.
