Ingredients
  

  • 4 russet potatoes large
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 tbsp olive oil
  • 1.5 cups shredded cheese cheddar or Mexican blend
  • 0.5 cup sour cream
  • 0.5 cup diced tomatoes
  • 0.25 cup green onions sliced
  • 0.5 cup salsa

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Wash and pierce potatoes, rub with olive oil, and sprinkle with salt.
  3. Bake potatoes for 50–60 minutes until fork-tender.
  4. Brown ground beef in a skillet, drain excess grease.
  5. Stir in taco seasoning and simmer until thick.
  6. Slice potatoes open and fluff the interior.
  7. Fill with taco meat and top with cheese.
  8. Return to oven until cheese melts.
  9. Add toppings and serve hot.
