Method
- Preheat oven to 400°F (205°C).
- Wash and pierce potatoes, rub with olive oil, and sprinkle with salt.
- Bake potatoes for 50–60 minutes until fork-tender.
- Brown ground beef in a skillet, drain excess grease.
- Stir in taco seasoning and simmer until thick.
- Slice potatoes open and fluff the interior.
- Fill with taco meat and top with cheese.
- Return to oven until cheese melts.
- Add toppings and serve hot.
