Ingredients
  

Birria
  • 3 lb beef chuck cut into chunks
  • 4 guajillo chiles deseeded
  • 2 ancho chiles deseeded
  • 1 onion quartered
  • 4 cloves garlic
  • 4 cups beef broth
Tacos
  • 12 corn tortillas
  • 2 cups Oaxaca cheese shredded

Equipment

  • Dutch oven
  • Blender
  • Skillet

Method
 

  1. Soak and blend dried chiles with spices and broth.
  2. Simmer beef in sauce until fork-tender.
  3. Shred beef and reserve cooking fat.
  4. Dip tortillas in fat, fill with cheese and beef.
  5. Pan-fry until crispy and serve with consomé.

Notes

Best served hot with fresh lime and herbs.
