- Preheat oven to 425°F (220°C) and heat pizza stone or baking sheet.
- Slice carrots lengthwise into long strips.
- Toss carrots with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Roast carrots for 20–25 minutes until tender and caramelized.
- Roll out pizza dough and spread sauce evenly.
- Top with cheese and arrange roasted carrots.
- Bake 12–15 minutes until crust is golden and cheese is bubbly.
- Drizzle with mustard, slice, and serve hot.
