- Thinly slice cucumbers and lightly salt. Let sit briefly, then drain excess liquid.
- Whisk soy sauce, rice vinegar, sesame oil, and sugar until dissolved.
- Add cucumbers to a large bowl and toss with dressing.

- Sprinkle with sesame seeds and serve immediately.
