Salad
  • 2 English cucumbers thinly sliced
  • 1 cup imitation crab meat shredded
  • 1 avocado cubed
Dressing
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp sesame seeds

Method
 

  1. Thinly slice cucumbers and lightly salt. Let sit briefly, then drain excess liquid.
  2. Whisk soy sauce, rice vinegar, sesame oil, and sugar until dissolved.
  3. Add cucumbers to a large bowl and toss with dressing.
  4. Gently fold in crab meat and avocado.
  5. Sprinkle with sesame seeds and serve immediately.

Notes

Best served fresh. Add avocado just before serving if making ahead.
