French Toast
  • 4 slices thick bread brioche or challah
  • 3 eggs large
  • 0.75 cup milk or half-and-half
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp salt
Banana Topping
  • 3 bananas ripe, sliced
  • 0.25 cup brown sugar
  • 2 tbsp unsalted butter
  • 0.5 tsp cinnamon
  • 1 tsp vanilla extract

Method
 

  1. Whisk eggs, milk, brown sugar, vanilla, cinnamon, and salt in a shallow bowl.
  2. Dip bread slices into custard, coating both sides.
  3. Cook bread in buttered skillet over medium heat until golden on both sides.
  4. Remove toast and keep warm.
  5. Melt butter in skillet, add bananas and brown sugar.
  6. Cook gently until bananas soften and caramelize.
  7. Stir in cinnamon and vanilla, then serve over French toast.

Notes

Use ripe bananas for maximum sweetness and caramel flavor.
