Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter for browning
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.25 cup milk
  • 1.5 cups mini marshmallows
  • 1 cup crispy rice cereal

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Brown butter until golden and fragrant. Cool slightly.
  3. Whisk dry ingredients together.
  4. Mix browned butter with sugars until smooth.
  5. Add egg and vanilla.
  6. Combine wet and dry ingredients with milk.
  7. Fold in marshmallows and cereal.
  8. Scoop dough and bake 10–12 minutes.

Notes

Do not overbake to keep marshmallows soft. Add extra marshmallows on top before baking for bakery-style look.
