Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves optional
  • 0.5 cup unsalted butter for browning
  • 0.5 cup honey
  • 0.5 cup brown sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup pistachios chopped
  • 0.25 cup milk

Method
 

  1. Preheat oven to 350°F (175°C). Line baking pan with parchment paper.
  2. Brown butter in saucepan until golden and fragrant. Cool slightly.
  3. Whisk dry ingredients together in a bowl.
  4. Mix browned butter, honey, and sugar until smooth.
  5. Add egg and vanilla, mix well.
  6. Combine dry ingredients with wet, alternating with milk.
  7. Fold in pistachios and spread batter in pan.
  8. Bake 20–25 minutes until golden. Cool before slicing.

Notes

Do not overbake to maintain chewy texture. Use fresh pistachios for best flavor.
