  • 1 lb fresh strawberries hulled and halved
  • 0.5 cup dark rum
  • 0.25 cup granulated sugar
  • 1 tsp lemon zest
  • 1 tsp vanilla extract optional
  • fresh mint leaves optional garnish

Method
 

  1. Rinse and hull the strawberries. Cut into halves and place in a medium bowl.
  2. Whisk together dark rum, sugar, lemon zest, and vanilla extract until sugar dissolves.
  3. Pour the rum mixture over strawberries and toss gently to coat. Cover and refrigerate 1–4 hours.
  4. Serve chilled in bowls, drizzled with syrup and garnished with mint if desired.

Notes

Best served chilled. Flavor improves the longer the berries soak.
