Ingredients
  

Fried Rice
  • 3 cups cooked jasmine rice cold
  • 1.5 cups fresh pineapple diced
  • 2 tbsp neutral cooking oil
  • 2 eggs beaten
  • 3 cloves garlic minced
  • 1 cup peas and carrots frozen
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.25 tsp black pepper
  • 0.25 tsp salt to taste
  • 0.25 cup green onions sliced

Method
 

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Scramble eggs until just set, then remove from pan.
  3. Sauté garlic briefly, then add pineapple and cook until lightly caramelized.
  4. Add vegetables and cook until heated through.
  5. Stir in rice and let sit briefly to brown.
  6. Drizzle soy sauce and sesame oil over rice and toss.
  7. Return eggs to pan, season, and stir in green onions.

Notes

Use cold rice for best texture and adjust seasoning to taste.
