- Preheat oven to 375°F (190°C).
- Brush tortillas with melted butter and coat with cinnamon sugar.
- Drape tortillas over oven rack or taco molds.
- Bake 8–10 minutes until golden and crisp. Cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Add heavy cream and whip until fluffy.
- Fill taco shells with cheesecake mixture.
- Top with mixed berries and serve.
