Ingredients
  

Red Beans
  • 1 lb dried red kidney beans soaked overnight
  • 12 oz andouille sausage sliced
  • 1 ham hock optional
  • 1 onion diced
  • 1 green bell pepper diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 6 cups chicken broth

Equipment

  • Dutch oven
  • Large pot
  • Wooden spoon
  • Rice pot with lid

Method
 

  1. Brown sausage and sauté vegetables.
  2. Add beans, spices, and broth.
  3. Simmer 1½–2 hours until tender.
  4. Mash slightly to thicken and serve over rice.

Notes

Beans taste better the next day. Adjust Cajun seasoning to preferred spice level.
