Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Slice a pocket into each chicken breast.
- Stuff each pocket with apple slices, brie, garlic, thyme, salt, and pepper.
- Secure chicken with toothpicks or twine.
- Heat 1 tbsp olive oil in a skillet and sear chicken 2–3 minutes per side.
- Transfer to baking dish and bake 20–25 minutes until internal temperature reaches 165°F (74°C).
- Drizzle with honey if desired. Rest 5 minutes before slicing and serving.
Notes
Pound chicken for even thickness. Brush with butter for extra flavor.
