Stuffed Chicken Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 medium apple, thinly sliced Granny Smith or Honeycrisp
  • 4 oz brie cheese, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • to taste salt and black pepper
  • 1-2 tsp honey optional

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Slice a pocket into each chicken breast.
  3. Stuff each pocket with apple slices, brie, garlic, thyme, salt, and pepper.
  4. Secure chicken with toothpicks or twine.
  5. Heat 1 tbsp olive oil in a skillet and sear chicken 2–3 minutes per side.
  6. Transfer to baking dish and bake 20–25 minutes until internal temperature reaches 165°F (74°C).
  7. Drizzle with honey if desired. Rest 5 minutes before slicing and serving.

Notes

Pound chicken for even thickness. Brush with butter for extra flavor.
